Thousands of years ago man first discovered how to use herbs to flavour food and for medicinal purposes. The Chinese are a very good example of how ancient herbalists made great use of the plants which nature provided, using herbs not only for cooking, but also as medicine and for perfumes.

Herbs can be herbaceous plants, such as mint, parsley and chives, or evergreen shrubs such as rosemary, sage and thyme. Many also have very ornamental foliage, which can add colour to a border.

Most herbs require a fertile, but well drained soil and not only grow and look healthier in full sun, but the flavour is also more outstanding. Those with very small gardens should try growing herbs in pots, which are best sited close to the house to enable you to gather them during inclement weather. Even if you do not have a garden, it is possible to have small pots of herbs grown in a pot on your windowsill. Chives, mint, parsley and thyme are ideal to grow in pots. Bay trees, rosemary and lavender will need larger containers planted with John Innes No. 3 compost. The plants are then kept in check by annual pruning or clipping. Do remember that all pot-grown plants will require feeding; use tomato fertilizer once a month between April and September.
Herbs are always at their best when picked from the current year’s growth. The old foliage will become coarse and lose much of its flavour. Most herbs can be picked and hung up to dry for use during the winter months. Alternatively, they may be collected fresh and put into bags in the deep freeze compartment of a refrigerator.

Angelica archangelica   ---
Upright perennial usually grown as a biennial with deeply divided bright green leaves and umbels of white or green flowers in late summer. Stems have culinary usage and when crystalised may be used for confectionery. Requires full sun and well drained soil. Height 6 feet.

Foeniculum vulgare 'Purpureum' (Bronze Fennel)  ---
Lovely perennial herb which is colourful enough to be grown in any border. Feathery bronze coloured foliage on proud, upright stems. Will grow in most fertile well drained soils in sun. Height 3 to 4 feet.

Hyssopus officinalis   ---
Semi-evergreen, or deciduous, bushy shrub with aromatic, narrowly oval, deep green leaves. Small, blue flowers appear from mid summer to early autumn. Sometimes used as a culinary herb. Requires full sun and well drained soil. Height 0.5m. Spread 0.5m.

The Bay Laurel. A large evergreen shrub or small tree with dark green aromatic leaves which may be used in cooking. Best grown in a sheltered position in a well drained soil. Ideal for clipping. Height 6 feet.

Origanum vulgare 'Aureum'  award
Woody based perennial forming a dense mat of aromatic, golden yellow, young leaves that turn pale yellow green in mid summer. Occasionally bears tiny, mauve flowers in summer. Requires full sun and well drained soil. Height in leaf 8cm, spread indefinite.
Origanum  'Kent Beauty'  ---
Woody based perennial forming a dense mat of aromatic, light green leaves, in mid summer numerous clusters of light green bracts turn pink and pink flowers are borne. Requires full sun and well drained soil. Trailing stems 18 inches.

Rosmarinus officinalis 'Gorizia'  ---
Evergreen very upright shrub with aromatic narrow leaves. Blue flowers appear from mid-spring to early summer and sometimes in autumn.  Used as a culinary herb.  Requires full sun and well drained soil.  Height 4 to 5 feet.
Rosmarinus officinalis 'Majorca Pink'  ---
A small evergreen shrub with grey-green aromatic foliage. Masses of duskey-pink flowers in April and May. Requires a fertile, well drained soil in sun. Height 2 to 3 feet.
Rosmarinus officinalis 'McConnells Blue'  award
A lovely dwarf, evergreen shrub whose foliage has a delicious fragrance.  Lavender blue flowers in May/June.  Requires a fertile but well drained soil in sun.  Resents cold wet gardens. Height 12 inches by 2 feet spread.
Rosmarinus officinalis 'Miss Jessopp's Upright'  award
A neat upright evergreen shrub with green very aromatic foliage.  Lavender-blue flowers during early summer.  Requires a well drained soil and full sun.  Height 3 feet.
Rosmarinus officinalis Prostratus Group  ---
A prostrate evergreen with delightfully fragrant foliage and lavender-blue flowers in April and May. Requires a well drained soil in full sun. Height 6 inches by 2 feet spread.
Rosmarinus officinalis 'Severn Sea'  award
Superb, prostrate evergreen shrub with grey-green highly fragrant foliage. Lavender-blue flowers in May and June. Requires a fertile but very well drained soil in sun. Height 1foot. Spread 2 feet.

Rosmarinus officinalis var. albiflorus 'Corsican Blue'  ---
A lovely prostrate evergreen shrub with highly aromatic, grey-green foliage and lavender blue flowers in May. Requires a fertile, very well drained soil and looks superb trailing down a dry, south-facing retaining wall. Height 6 inches by 2 feet spread.
Rosmarinus officinalis var. albiflorus 'Lady in White'  ---
Superb low growing evergreen shrub with highly aromatic foliage. White flowers are produced along the stems during the spring and early summer. Requires a fertile, but well drained soil in sun. Height 2.5 feet.
Ruta graveolens   ---
A low growing evergreen herb with blue-green foliage and heads of small yellow flowers in early summer.  Requires a fertile well drained soil in sun. Foliage is an irritant to some people. Height 18 inches.
